So running a lower thermostat results in lower temperatures?

If the cooling system has the capacity to sustain, yes.
No I don't run straight water wetter I added a bottle to the cooling and a bottle to the intercooler. It freezes up here I need the antifreeze

Mixing anti-freeze with water raises the boiling point of the water in the mixture and the anti-freeze itself. The anti-freeze also acts as a lubricant to the coolant system. Running straight water is not recommended because it cant properly lubricate and it has a much lower boiling point of 212F. It can also cause rust in the water jacket of iron blocks and or corroded water jackets in aluminum blocks. In a pinch yes, you can use water, but its not recommended to run it all the time.
